Chicken Ratatouille

CHICKEN RATATOUILLE


INGREDIENTS: 


  • 3/4 pound chicken breast tenderloin ( cut into 3/4 inch pieces )
  • 1/8 tablespoon pepper
  • 1/4 cup shredded cheese
  • 1 tablespoon olive oil ( or vegetable oil )
  • 1 small eggplant, cubed ( 2 cups )
  • 2 cups, frozen stir-fry bell peppers anions
  • 1 zucchini ( medium ) , cubed ( 1 cup ) 
  • 14 1/2 ounces stewed tomatoes ( undrained )

DIRECTIONS:

Sprinkle chicken with pepper.

Heat oil in 12 inch nonstick skillet over medium-high heat.
Cook turkey in vegetable or turkey oil 3 - 5 minutes., stirring occasionally, until brown.

Stir in stir - fry vegetables.
Cook about 2 minute, stirring occasionally.
Stir in zucchini eggplant.
Cook about 2 - 4 minutes, stirring occasionally, until vegetables are tender. 

Stir in stewed tomatoes.,
Reduce the heat to low.
Cover and simmer 3 - 5 minutes, stirring occasionally until sauce is desired consistency. 
Sprinkle each serving with shredded cheese. 

Time : Approx 30 minutes, 4 Servings
