Chicken Stir - Fry



1 pound boneless, skinless chicken ( cut in to 1/2 pieces )
2 vegetable oils tablespoons
2 lime juice tablespoons
2 teaspoon chili powder
2 tablespoons finely chopped cilantro
1/3 cups salsa
1 thinly sliced small zucchini
1 small, thinly sliced yellow summer squash 


In a medium bowl, mix chili powder and lime juice.
Stir in chicken until well coated.
Cover and put to refrigerated for 1 hour.

Heat skillet ( 12 inch ) over the high heat. 
Add 1 vegetable oil tablespoon and rotate skillet to coat side.

Add chicken; marinade. Stir - fry 4 - 6 minutes or until chicken is no longer pink in center. 

Remove chicken from skillet.

Add remaining 1 vegetable oil tablespoon to skillet, and rotate skillet to coat aside.
Add yellow summer squash and zucchini.
Stir-fry about 5 minutes until vegetables are crispy tender.
Stir in chicken, cilantro and salsa.  

Time: Prepare 15 min, Cook 11-12 min, Marinate 60 mins
