Egg Bake



  • 7 eggs
  • 4 ounces of chopped chilies
  • 2 cups corn bread stuffing crumbs
  • 1 can, drained whole kernel corn
  • 1/2 cup sour cream
  • 1 cup shredded cheese
  • 1 teaspoon ground black pepper


Set oven heat 400 degrees and heat.
Spray rectangular 13 x 9 x 2 inches baking dish, with non-stick cooking spray.

Mix 1 egg, chilies, stuffing corn and sour cream in a suitable bowl.
Spread evenly in baking dish.

In stuffing mixture, make six indentations with back of spoon.
Break one egg into each indentations, pierce yolk of each egg with a fork.
Bake uncovered about 24 -25 minutes or until yolks are firm and egg whites.

Sprinkle with cheese over the stuffing mixture.
Bake for 2-3 minutes or until cheese is melted.
Sprinkle with black pepper, if desired and serve with salsa.

Time - Approx. 36 minutes, 6 servings
