Polenta Pie

POLENTA PIE


INGREDIENTS:


  • 2 cups water
  • 3/4 cup cornmeal
  • 1/3 cup taco chips
  • 1/4 teaspoon salt
  • 1 slightly beaten egg
  • 3 ounces cup shredded cheese with jalapeno peppers 
  • 15 ounces drained chili beans

DIRECTIONS: 

Heat oven to 375 degrees.
Grease the pie plate (9 x 1 1/4 inches)
Mix the cornmeal . salt and water in medium saucepan.
Heat to boiling., stirring constantly.Reduce oven heat to to medium.
Cook about 5-6 minutes, stirring frequently until the mixture is thick.
Remove from the heat, quickly let stand about 4-5 minutes.Stir in egg.
Spread cornmeal mixture in pie plate. Bake uncovered about 13-15 minutes.
Spread chili beans over cornmeal mixture,
Sprinkle with cheese and taco chips.
Bake uncovered about 18-20 minutes or until center is set. 
Let stand 4-5 minutes before serving.

Time: Prepare - 15 min, Bake: 40 min, Stand: 5 min, Six Servings
