Pork with Chick - Pea and Spinach



  • 10 ounces boneless lean pork loin ( cut into 1/2 inches cubes )
  • 10 thinly sliced garlic cloves
  • 3/4 teaspoon crushed red pepper 
  • 1 pound spinach ( trimmed and drained ) 
  • 1/4 teaspoon salt
  • 8 ounces cooked, drained chick peas
  • 1/4 teaspoon dried thyme leaves
  • 1 teaspoon of olive oil
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon dried basil


Combine salt and spinach in large skillet.
Cook over medium heat, covered for 4-5 minutes until wilted. 
Drain and discard liquid, squeeze spinach dry.
Chopped spinach, set aside, Wipe skillet to dry.

Heat olive oil, and add pork, crushed red pepper and garlic in the same skillet.
Set heat to medium and cook about 8-10 minutes, stirring frequently until pork is browned on all sides and cook through.

Add cooked chick peas, basil, black pepper, thyme and cooked spinach.
Cook, tossing constantly 4-5 minutes until the mixture is heated through.

Time: 30 minutes, 4 Servings
