Wild Rice - Pecan Patties



  • 2 tablespoons of vegetable oil
  • 2 cups of wild rice (cooked)
  • 1 cup soft bread crumbs
  • 2 medium eggs
  • 2 1/2 ounces of drained and chopped mushroom stems and pieces
  • 1/3 cup chopped pecans
  • 1/2 tablespoon garlic salt
  • 2 ounces drained, diced pimientos


Mix cooked rice, bread crumbs, pecans, eggs, mushroom, garlic salt, pimientos.
Set heat to medium heat.
Heat the vegetable oil in 10 inch skillet over medium heat.
Scoop wild rice mixture by 1/3 cupfuls into the skillet.,
Flatten to 1/2 of inch.

Cook about 2-3 minutes on each side or until light brown.
Remove Patties from skillet.
Cover and keep warm while cooking remaining patties.

Time: Approx 25 minus, 4 Servings ( 2 patties each )
